After Christmas, my boyfriend and I took a trip to Colorado for a nice little getaway. I had been before with family and it was one of my favorite trips so I wanted to go to some of the memorable spots as well as some new ones. We went to a different city every day, starting our trip in Denver where our hotel was. It was absolutely amazing and so much fun. Here’s some of the best pictures and our stops along the way.
My favorite breakfast meal was at Sam’s No. 3 in downtown Denver. We found it through Diners, Drive-Ins & Dives and it was fantastic. I got the “Mexican Breakfast” – three egg scrambler with jalapeno, chorizo, onions and jack cheese with a side of tortillas and Kickin’ Pork Chili. If you like spicy, this is the meal for you. Loved it!
After breakfast we headed to the Denver Art Museum and across the street from the entrance was the Civic Center Park. It was gorgeous and had an awesome view of the city beyond it.
We went to the art museum to see an artist’s exhibit that I’ve been dying to see, El Anatsui. His exhibit just so happened to be in Denver while we were there, so it worked out perfectly! There weren’t as many of his pieces as I was hoping, but the ones that were there were amazing. Everything he creates is from recycled materials, such as bottle caps and tops from canned goods. The way he drapes and shapes the pieces is just gorgeous.
Our first night in town we went to eat at Max Gill and Grill in Washington Park for some seafood. It was delicious and I loved my outfit!

*My earrings are hard to see, but so cool so I have to mention them. My mom got them on a trip to Florida and they’re spiral drop earrings made from recycled camera film. They match the blues and greens in my shirt perfectly, love them. I’ll feature them in a post soon with pictures.

After our massages we drove out to Boulder to see the city and school. We had lunch on the hill at The Sink, also featured on Diners, Drive-Ins & Dives, and is the oldest restaurant on the hill. They had a great local beer selection and delicious burgers. We had the Texas Onion Straw and the Goat Cheese burgers – so good!
Our trip out to Boulder was primarily to go to Flagstaff House for dinner. It’s nestled at the top of a mountain with a 360 degree view of the city below. It was absolutely breathtaking and the food was amazing. We started with Nantucket Scallops and then had a lamb entrée with lamb rack atop truffle polenta and lamb loin paired with root vegetables and goat cheese with basil. This is definitely a place I’d love to go back to.

The next day we drove to Colorado Springs and did a bit of hiking and sightseeing. Our stop at Garden of the Gods was my favorite part of the trip. I have been before and absolutely love it. The mountains and natural rock are just gorgeous. We spent almost 3 hours hiking through and exploring.

On New Year’s Eve we went snowboarding during the day, as you saw in my previous post. The drive out to Eldora was both gorgeous and terrifying, winding through the mountains.
We went to a few breweries on our trip, but Left Hand was definitely my favorite out of them all. I love their milk stout, but wanted to try some different brews while we were there. The Wake up Dead stout was my favorite!
If you read my post yesterday you know we spent NYE in downtown Denver at a cute little Italian cafe. This view of the city on our way to dinner was gorgeous with all the lights and people just after the fireworks. If you missed my NYE post with my outfit make sure to read it here.
Our trip was amazing, couldn’t have asked for a better time. Can’t wait to go back and explore even more places, the variety of activities and places we went was just great. I can’t decide which was my favorite between all the exploring, eating, drinking and relaxing.
